Steamed pork with rice powder is one of the traditional steamed dishes in China, originating from the southern part of China. With the changing times, people have innovated and modified the recipe for steamed pork with rice powder. Different regions and chefs have added their unique flavors and seasonings, such as doubanjiang (spicy bean paste), Sichuan peppercorns, etc., to the traditional recipe, making the taste of steamed pork with rice powder more diverse and rich.

  • Clean the skin-on pork belly and cut it into thick slices. Combine the marinade ingredients and the pork belly in a large bowl. Mix well and marinate for at least 30 minutes and up to overnight.
  • Add the rice powder to the marinated pork and mix until the pork are coated evenly.
  • Place the sweet potatoes in a heatproof dish. Arrange the marinated pork on top of the layer of sweet potatoes. Add sufficient water to the steamer, place the dish in the steamer, and cover it with a lid. Steam the pork over medium-high heat for about 1 hour or until both the pork and sweet potatoes are fully cooked.
  • Remove the dish from the heat and sprinkle the chopped scallions over the pork. Serve hot with rice or as a side dish.
