  • Mix the sauce ingredients in a small bowl, stir well.
  • Combine the chicken and marinade ingredients and marinate for about 10 minutes.
  • Cook the rice vermicelli according to the package instructions and drain.
  • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Pour the beaten eggs into the skillet. Scramble the eggs until they are fully cooked. Remove the eggs from the skillet and set aside.
  • In the same skillet, heat an additional tablespoon (12g) of vegetable oil over medium-high heat. Sauté the chicken in the skillet for 4-5 minutes, then take out the chicken and set it aside.
  • In the skillet, heat another tablespoon (12g) of vegetable oil over medium heat. Stir-fry the shrimp in the skillet for 3-4 minutes, then take them out and set aside.
  • In the skillet, heat an additional tablespoon (12g) of vegetable oil over medium-high heat. Add garlic and onions. Stir-fry for 2-3 minutes until fragrant. Add red bell pepper and carrot, stir-frying for a few minutes until the vegetables are slightly tender.
  • Push the ingredients to one side of the skillet, put curry powder in the middle, stir-fry the curry powder for one minute until fragrant. Add cooked rice vermicelli noodles to the skillet, then add bean sprouts, green onions, egg, chicken, and shrimp. Pour the sauce over the noodles and toss everything together until well combined.
  • Serve the Singapore noodles hot. Enjoy your delicious Singapore-style noodles!
