Combine the chicken and marinade ingredients and marinate for about 10 minutes.

Combine the sauce ingredients in a small bowl. Set aside.

Heat a skillet over medium-high heat, add 1 tablespoon (12g) of vegetable oil. When the oil is hot, add the beaten eggs and stir until fully cooked. Remove the eggs from the skillet and set aside.

In the same skillet, heat another tablespoon of vegetable oil over medium-high heat. Add the garlic and onion and sauté for 2 minutes until the onions are translucent.

Add the chicken to the skillet and stir-fry for 3-4 minutes. Then add the shrimp to the skillet and stir-fry for 40 seconds. Remove the onion, chicken, and shrimp from the skillet.

Heat 1 tablespoon of vegetable oil in the skillet. Add the cooked rice to the skillet and stir-fry for 3-4 minutes until the rice is heated through and lightly browned.

Add the scrambled eggs, cooked onion, chicken and shrimp back to the skillet and stir-fry for another minute. Drizzle the sauce over the fried rice and stir to combine.

Add the cashews, raisins, and diced pineapple to the skillet and stir-fry for 1 minute or until the ingredients are well combined and the flavors are blended. Stir in the green onions.
