  • Combine the chicken and marinade ingredients and marinate for about 10 minutes.
  • Combine the sauce ingredients in a small bowl. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Pour the beaten eggs into the skillet. Scramble the eggs until they are fully cooked. Remove the eggs from the skillet and set aside.
  • Heat another tablespoon of oil in the skillet over medium-high heat. Stir-fry the marinated chicken for 1 minute while occasionally stirring. Remove from heat and set aside.
  • Heat the oil in the skillet over medium-high heat. Add garlic, red Thai chile peppers and onion, and sauté until fragrant and softened.
  • Add the cooked jasmine rice to the skillet, breaking up any clumps of rice. Mix everything together.
  • Drizzle the sauce and add the Chinese broccoli to the skillet. Then stir in the scrambled eggs and cooked chicken. Stir-fry for another minute or two until the flavors are well combined.
  • Garnish with Thai basil leaves, scallions and Lime wedges. Serve hot and enjoy!
