  • In a bowl, whisk together the soy sauce, mirin, sake, honey, grated ginger and salt to create the teriyaki marinade.
  • Place the chicken thighs in a big bowl. Pour the teriyaki marinade over the chicken and let it marinate for 20 minutes.
  • Preheat vegetable oil in a skillet over medium-high heat. Once the oil is hot, take the chicken out from the marinade (reserving the marinade) and place it in the skillet. Reduce the heat to medium and fry each side for about 4-5 minutes until the chicken is cooked through, and it has a beautiful caramelized exterior.
  • While the chicken is cooking, pour the reserved marinade into a small saucepan. Bring it to a boil, then reduce the heat to a simmer and let it cook for a few minutes until it slightly thickens.
  • Pour the teriyaki sauce into the skillet and evenly coat both sides of the chicken with the sauce. This will create a glossy and flavorful glaze.
  • Remove the chicken from the heat and let it rest for a minute. Slice the chicken into strips. Serve the teriyaki chicken over steamed rice, drizzle with any remaining sauce, and sprinkle with sesame seeds and sliced green onions for garnish.

Remember that you can adjust the sweetness or saltiness of the teriyaki sauce to your preference by tweaking the amount of sugar and soy sauce in the recipe.
