The aroma and taste emitted by sweet fermented rice are enchanting, with a fragrance of wine that is aromatic yet not overwhelming. Sweet fermented rice also plays a unique role in cooking. It can be used to create various delicious desserts, such as sweet rice wine tangyuan and sweet fermented rice cakes.

  • Rinse the sticky rice under cold water until the water is clear.
  • Place the rice in a clean bowl, cover it with water, and let it soak overnight. Drain the rice afterwards.
  • Place cheesecloth on the steamer and spread the soaked glutinous rice evenly. Steam the glutinous rice over high heat for about 30 minutes or until it's cooked.
  • Transfer the steamed rice to a large clean mixing bowl and allow it to cool to room temperature.
  • In a small bowl, dissolve the rice wine leaven in 1/2 cup (118g) of water. Pour this mixture into the cooled rice, and thoroughly combine. Cover the bowl with plastic wrap. Place the bowl in a warm, dark place with consistent temperature, around 80-90°F (27-32°C), for fermentation. Let the rice ferment for about 3 days. The fermentation time can vary based on the temperature and desired level of sweetness.
  • Once the desired sweetness is achieved, transfer the fermented rice to clean, airtight containers. Store in the refrigerator to slow down the fermentation process.
  • Serve it chilled as a sweet treat, or use it to make other dishes like sweet rice wine soup (Tang Yuan).

Notes

Make sure to maintain a clean and sterile environment throughout the fermentation process. Adjust the fermentation time based on your taste preferences. Longer fermentation will result in a sweeter taste.
