  • Preheat the oven to 350°F. Season the chicken breasts with salt and black pepper on both sides.
  • Place flour in a shallow dish. In another dish, beat the eggs. In a third dish, combine the breadcrumbs and Parmesan cheese.
  • Dredge each chicken breast in the flour, shaking off excess. Dip the chicken into the beaten eggs, ensuring it's fully coated. Press the chicken into the breadcrumb mixture, making sure it's well-covered.
  • In a large cast iron skillet, heat olive oil over medium-high heat. Place the coated chicken breasts in the skillet and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove chicken from the pan.
  • Pour the tomato sauce into the skillet and heat over medium heat until it bubbles. Return the chicken to the skillet, spoon the marinara sauce over each chicken breast, and finally sprinkle with mozzarella cheese .
  • Transfer the cast iron skillet to the oven and bake for 25 minutes, or until the cheese is melted and bubbly. Remove the skillet from the oven. Garnish with fresh parsley.
  • Serve the skillet chicken Parmesan over cooked pasta or with a side of crusty bread.
