Shredded pork with tofu gan is an authentic Chinese home-style dish. Its main ingredients are lean pork and tofu gan. Tofu gan is a product made by removing excess water from tofu during the drying and sun-drying process. Tofu gan can be made into various delicacies, such as pan-fried, braised, stir-fried, and soup dishes. It has a rich texture, soft but chewy. Shredded pork with tofu gan has a bright color and is a perfect dish to accompany rice.

  • In a bowl, combine the pork and marinade ingredients and marinate for about 20 minutes. Set aside.
  • Combine the sauce ingredients in a small bowl and mix well.
  • Heat up a wok over high heat and add 2 tablespoons of vegetable oil. Once the oil is hot, add the pork and stir-fry until it is browned on all sides. Remove from the wok and set aside.
  • In the same wok, add another tablespoon of vegetable oil. Add the garlic and tofu gan and stir-fry for 1-2 minutes.
  • Add the cooked pork and sauce, and stir-fry for 2 minutes until the sauce thickens and coats the pork and tofu evenly.
  • Add the sliced green onions and stir-fry for an additional 10 seconds. Serve hot with steamed rice. Enjoy!
