  • Trim any excess fat from the beef tenderloin, ensuring it is even in thickness. Rub the beef tenderloin on all sides with salt and black pepper, and tie it with kitchen twine at 1 1/2-inch intervals to maintain its shape during roasting. Refrigerate overnight.
  • Let the beef stand at room temperature for 1 hour before roasting. Heat the olive oil in a large ovenproof skillet over medium-high heat. Once the oil is hot, add the seasoned beef tenderloin and sear it on all sides until nicely browned. This should take about 12 minutes total.
  • In a small bowl, mix together the minced garlic, rosemary and softened butter. Generously spread the butter mixture over the seared tenderloin's top.
  • Preheat your oven to 425°F (220°C). Place the skillet with the beef in the preheated oven. Roast the beef for about 25-30 minutes for medium-rare or 30–35 minutes for medium . You can use a meat thermometer to check the internal temperature. For a medium-rare doneness, aim for about 130-135°F (54-57°C). For medium, aim for about 140°F (60°C).
  • Once the beef reaches your desired doneness, remove it from the oven and transfer it to a cutting board. Cover the beef tenderloin loosely with aluminum foil and let it rest for about 10-15 minutes. Remove the kitchen twine from the rested beef tenderloin and slice it into thick rounds.
  • Pair your oven-roasted beef tenderloin slices with your preferred side dishes, such as roasted vegetables, mashed potatoes, or a crisp green salad.
