  • In a bowl, mix the sliced lamb with light soy sauce, Shaoxing wine, cornstarch and vegetable oil. Let it marinate for about 15-20 minutes.
  • In a small bowl, mix together the sauce ingredients to create the sauce. Set aside.
  • In a wok, heat vegetable oil over high heat. Add the marinated lamb slices and stir-fry for about 1 minute. Transfer the lamb to a plate.
  • In the wok, there should be 1 tablespoon (13g) of remaining oil; if not enough, add a little more oil. Reduce the heat to medium, add garlic, ginger, and dried red chili peppers. Stir-fry for about 30 seconds, or until fragrant. Return the cooked lamb to the wok, pour the sauce over the lamb. Toss everything together to coat the lamb slices with the sauce. Cook for an additional 30 seconds until the sauce thickens.
  • Add the sliced green onions and cilantro to the wok and stir-fry for 10 seconds.
  • Transfer the Hunan Stir-Fried Lamb to a plate and serve hot.
