  • Place the lamb racks on a clean cutting board and pat them dry with paper towels. Season both racks with salt and black pepper.
  • In a food processor, combine garlic, rosemary, parsley, and olive oil. Process until the garlic is finely chopped and mix well to create a fragrant herb paste. Spread the herb paste evenly on both sides of each lamb rack. Allow the lamb to marinate for 30 minutes at room temperature.
  • Preheat your oven to 450°F (230°C). Arrange the lamb racks on a roasting pan with the meaty side facing up. Roast the lamb in the preheated oven for around 15 minutes. Flip the racks and continue roasting for 10 minutes for medium-rare or adjust the cooking time to your preferred level of doneness.
  • Remove the lamb racks from the oven and cover loosely with foil. Let them rest for approximately 10 minutes. This allows the juices to redistribute. Slice the racks of lamb between the bones into individual chops. Arrange the lamb chops on a serving platter to serve.
