  • In a large mixing bowl, combine orange juice, lime juice, olive oil, minced garlic, ground cumin, dried oregano, salt and black pepper. Mix well to create the marinade.
  • Place the pork shoulder or pork loin in a shallow dish. Pour the marinade over the pork, making sure it is evenly coated. Marinate in the refrigerator for at least 4 hours, preferably overnight, turning occasionally to ensure the pork is evenly marinated.
  • Preheat the oven to 400°F (204°C). Remove the pork from the marinade and allow it to rest for 1 hour to come to room temperature. Reserve the marinade.
  • Roast the pork in the preheated oven at 400°F (204°C) for 30 minutes. Baste the pork with the reserved marinade, then reduce the heat to 375°F (190°C). Continue roasting the pork for 2 hours, or until the internal temperature reaches at least 170°F (76°C), or until the pork is tender and easily pulls apart with a fork.
  • Once the pork is cooked through, remove it from the oven and let it rest for 10-15 minutes before slicing or shredding. Serve the Cuban roast pork hot with your favorite side dishes, such as rice and beans, plantains, or Cuban bread.
