  • Steam the pumpkin chunks until they are soft and tender, usually it takes for 20 minutes. Mash the steamed pumpkin into a smooth puree. Set aside to cool.
  • In a large mixing bowl, combine the glutinous rice flour, rice flour, and sugar. Mix well to ensure all the dry ingredients are evenly combined.
  • Gradually add the pumpkin puree to the dry ingredients. Stir and mix until a smooth dough forms. If the dough is too sticky, add 1 tablespoon of extra rice flour. Cover the dough with plastic wrap and let it rest for 30 minutes.
  • Shape the dough into a log and divide it into 25 equal portions. Roll each portion into a round ball and place them on a baking sheet.
  • Place white sesame seeds in a small bowl. Place the dough ball on top of the sesame seeds and gently press it down to flatten it into a round shape.
  • Heat vegetable oil in a skillet over medium heat. Gently arrange the pumpkin cakes in the skillet. Cook until the bottom turns golden brown. Flip the pumpkin cake and cook the other side until it also becomes golden brown and cooked through, about 4 minutes per side.
  • Serve the Chinese Pumpkin Cakes as a delicious snack or dessert. They can be enjoyed on their own or paired with a cup of hot tea.
