  • In a bowl, mix together the soy sauce, rice wine, cornstarch and egg white. Add the chicken cubes in the bowl. Marinate for at least 15 minutes.
  • Combine the sauce ingredients in a small bowl and mix well.
  • In a pan, heat vegetable oil over medium-high heat. Add the chicken and stir-fry for about 3-4 minutes. Remove the chicken from the pan.
  • Add the onion and bell pepper to the pan and stir-fry for 2-3 minutes until the vegetables are slightly tender. Remove the vegetables from the pan.
  • Stir-fry the garlic, ginger, and green onions for 20 seconds, then add the black bean sauce to the pan and sauté for 30 seconds until they become fragrant.
  • Return the sautéed chicken and vegetables to the pan, pour in the sauce, stir evenly, and let the sauce simmer for 30 seconds. Plate the dish and serve it hot with rice.
