  • Finely chop the shrimp into small 1/4-inch pieces.
  • In a mixing bowl, combine the ground pork, shrimp, diced shiitake mushrooms, green onions, and cornstarch.
  • Combine the sauce ingredients in a small bowl and mix well.
  • Add the sauce to the ground pork filling. Mix well until all the ingredients are evenly incorporated.
  • Take a wonton wrapper and place about 2 tablespoons of the filling in the center. Gently gather the edges of the wrapper and pleat it around the filling, leaving the top open. Repeat with the remaining wrappers and filling.
  • Place the shumai on a steamer lined with parchment paper, leaving some space between each dumpling. Steam the shumai over high heat for about 10-12 minutes or until the filling is cooked through.
  • Serve the Cantonese Shumai hot with chili sauce or your favorite dipping sauce.
