  • In a medium bowl, mix together the salt, soy sauce, Chinese rice wine, cornstarch and egg white. Add the beef in the bowl. Marinate for at least 20 minutes.
  • Combine the sauce ingredients in a small bowl and mix well. Set aside.
  • Heat a large skillet over high heat. Add the vegetable oil and swirl to coat the pan. Add the beef strips to the skillet and stir-fry for 1 minute. Remove the beef from the pan and set aside.
  • In the same skillet, reserve 1 tablespoon (15ml) of oil. Add the garlic, ginger, and scallions, and stir-fry for 15 seconds until they become fragrant. Add the onion, sliced green and red bell peppers to the skillet and stir-fry for another 1-2 minutes.
  • Return the cooked beef to the skillet, pour in the sauce, and stir-fry for 1 minute until the sauce thickens. Plate it and serve with steamed rice if you prefer.
