As a classic staple food, the steamed twisted rolls emit a rich aroma of scallions and possess a unique texture. Its outer layer is soft yet chewy, while the inside is layered and flavorful, offering a diverse range of sensations. The perfect blend of the scallion’s fragrance and the dough’s sweetness arouses one’s appetite.
In a large mixing bowl, combine the all-purpose flour and instant yeast. Gradually add the warm water while stirring the mixture until a dough forms.
Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
Place the dough in a greased bowl and cover it with a plastic wrap. Let it rest in a warm place for about 1 hour or until it doubles in size.
Once the dough has risen, punch it down to release the air and knead for 5 minutes. Sprinkle a small amount of flour on the board. Using a rolling pin to roll the dough into an approximate 12x14-inch rectangle.
Brush the dough all over with a thin layer of oil. Sprinkle the salt evenly, and then add all of the chopped scallions.
Fold the top edge towards the center, then fold the bottom edge up to meet the upper edge, creating a long rectangle. Press firmly to eliminate any air bubbles. Use a knife to cut the dough into 12 even strips, about 1-inch (2.5 cm) wide.
Take two strips at a time and stack them together. Use a chopstick to press down along the center, creating an indentation. Hold the two ends and gently stretch it slightly. Hang the end of the dough strip over a chopstick (the side without the indentation) and pinch the two ends together. With your other hand, rotate the chopstick to twist the dough into a spiral shape. Repeat the process with the remaining dough portions.
Place the twisted rolls onto a bamboo steamer basket, leaving some space between each roll. Cover the bamboo steamer basket and let the rolls rise for another 30 minutes.
Add water to a steamer and set it to high heat to bring the water to a boil. Then, reduce the heat to medium-high and steam the rolls for about 15 minutes or until they are fully cooked. Turn off the heat and let the buns remain in the steamer for an additional 5 minutes before uncovering them. This will help prevent the buns from shrinking due to a sudden drop in temperature. Carefully remove the steamed twisted rolls from the steamer and serve hot.
