Sesame balls, also known as “Jiandui“, are a delectable treat. These small, round pastries are made from glutinous rice flour and are typically filled with sweet or savory fillings, coated in sesame seeds, and deep-fried to a crispy golden-brown perfection. Sesame balls are beloved for their unique combination of textures, with a chewy exterior and a soft, flavorful interior.

  • Add water in a pot over medium-high heat and bring it to a boil. Add sugar until it dissolves.
  • In a mixing bowl, combine the glutinous rice flour and boiled water. Mix until a dough forms. Add 1 tsp oil to the dough and knead the oil into the dough. Cover the bowl with plastic wrap and allow your dough to rest for 20-30 minutes.
  • Tear off a golf-ball sized piece of dough and form a 1 inch in diameter ball by hand. Flatten each ball with your thumb and place a small amount of red bean paste in the center. Pinch the edges together to enclose the filling and roll the ball back into a round shape.
  • Place the sesame seeds in a small bowl.
  • Dip each sesame ball into the water in the small bowl one by one. Then, roll each sesame ball in the sesame seeds, pressing the seeds onto the surface of the dough.
  • Heat the oil in a deep frying pan over medium-low heat until it reaches a temperature of 250°F (120°C). Gently drop the balls into the hot oil and fry until golden brown, turning occasionally.
  • Use a slotted spoon to scoop the sesame balls out, and place them on paper towels to remove excess oil.

Notes

To save time, I purchased ready-made red bean paste from a Chinese store, but you can also make it from scratch using red beans if you'd like.
