Shredded Pork with Garlic Sauce is famous for its rich aroma and mildly spicy taste. Its uniqueness lies in the fusion of five flavors: sour, sweet, salty, spicy, and umami. It is a classic dish in traditional Sichuan cuisine, a treasure of Chinese culinary heritage.

  • In a bowl, mix the pork and marinade ingredients. Let it marinate for about 15-20 minutes.
  • In another bowl, mix the sauce ingredients together and set aside.
  • In a pot, bring the water to a boil. Boil the wood ear mushrooms for 3 minutes. Drain the wood ear mushrooms and cut them into thin strips.
  • Heat 2 tablespoons (26g) of vegetable oil in a skillet over medium-high heat. Add the marinated pork strips to the skillet and stir-fry for about 40 seconds. Remove the pork from the skillet and set them aside.
  • Heat 1 tablespoon (13g) of vegetable oil over medium heat in the skillet. Add Sichuan pickled chili peppers, minced garlic, and minced ginger. Stir-fry for about 30 seconds until fragrant.
  • Adjust the heat to medium-high. Toss the wood ear mushrooms, carrot, and green pepper into the skillet. Stir-fry for approximately 1 minute.
  • Return the cooked pork to the skillet and sauté for 20 seconds. Pour the prepared sauce over the pork and vegetables. Toss everything together for an extra 30 seconds to make sure the pork is well coated with the sauce.
  • Add sliced green onions in the skillet and sauté for 10 seconds. Serve the delicious Shredded Pork with Garlic Sauce over steamed white rice.

Notes

If you don't have Sichuan pickled chili peppers, you can use pickled jalapeno peppers as a substitute.
