Yangzhou Fried Rice is a famous traditional dish in Yangzhou city. Its history can be traced back to the Ming Dynasty, when Yangzhou was an important city in southern China and a center for trade and cultural exchange, leading to the development and fusion of various cuisine styles. Yangzhou fried rice gradually formed and has been passed down to this day in this context.

  • Add 3 cups of water to a medium pot and bring it to a boil over high heat. Reduce the heat to medium-high, add the shrimp to the pot. After about 2 minutes, drain the shrimp and transfer them to a plate, setting it aside.
  • Heat a skillet over medium-high heat. Add 1 tablespoon (12g) of vegetable oil and swirl to coat the bottom of the pan. Add the beaten eggs and scramble until cooked. Remove the eggs from the pan and set them aside.
  • Heat another tablespoon (12g) of oil in the skillet. Add the diced ham, cooked chicken breast, bamboo shoots, and shiitake mushrooms to the same pan and cook for about 1 minute.
  • Add the frozen peas and cooked rice to the pan and stir-fry for 5-7 minutes. Add the cooked shrimp to the pan and stir-fry for another minute.
  • Add the scrambled eggs, green onions, salt and soy sauce to the pan and stir everything together.
  • Transfer the Yangzhou fried rice to a serving dish and enjoy it hot.

Notes

You can adjust the amount of ingredients based on your preference. You can also add other vegetables such as bell peppers, mushrooms, or carrots.
