  • Heat vegetable oil in a wok to 350°F. Add pork spare ribs and fry until golden brown. Remove fried spare ribs, set aside.
  • Reserve a small amount of oil in the wok. Heat the wok over medium heat, add ginger and scallions, and sauté.
  • Turn the heat to medium-high and return spare ribs to the wok. Add Shaoxing wine, light soy sauce, dark soy sauce, ketchup, sugar, salt, cinnamon stick, star anise, and hot water. Let it come to a boil. Reduce the heat to medium-low, cover the wok with a lid, and simmer for 50 minutes until the sauce thickens.
  • Transfer the Wuxi fried spare ribs to a serving plate and garnish with chopped scallions. Serve hot with steamed rice.
