Winter Melon Meatball Soup

Yields: 4 Servings Difficulty: Medium Prep Time: 15 Mins Cook Time: 20 Mins Total Time: 35 Mins

Winter melon meatball soup is a delicious and healthy dish. My unique secret is to add garlic to the meatballs, making this dish more unique and full of garlic flavor. Mix the minced meat and garlic together, then shape them into small meatballs with your hands. These meatballs can make the soup even more delicious, as the garlic flavor can penetrate into the meat, creating a unique taste. Whether it’s a cold winter night or a hot summer afternoon, a bowl of winter melon meatball soup can make you feel the warmth and happiness of the taste.

  • In a large bowl, mix together the ground pork and other meatball ingredients. Mix well until the mixture is fully combined.
  • Using your hands, shape the meat mixture into small meatballs, each about 1 inch (2.5 cm) in size.
  • In a large pot, bring the chicken broth and water to a boil over medium-high heat. Turn to medium-low heat. Carefully drop the meatballs into the pot one by one. Gently stir the soup to prevent the meatballs from sticking together. Turn the heat to medium-high and cook for 4-5 minutes, or until the meatballs cook through. Transfer all the meatballs to a plate and set aside.
  • Add the winter melon to the pot and bring the soup to a boil over high heat. Then, reduce the heat to medium and let it simmer for 6 to 8 minutes until the winter melon is almost cooked through.
  • Add the meatballs back to the soup and bring it to a boil again. Cook for 1 minute. Add sesame oil, salt, and ground white pepper to the pot. Garnish with chopped scallions and cilantro.
