  • Mix the cornstarch and water to make slurry.
  • Boil a pot of water. Add the ground beef to the pot and let it boil for one minute. Use a strainer to transfer the ground beef to a bowl and discard the water.
  • Pour in the chicken broth and 2 cups of water, bringing the soup to a boil. Reduce the heat to low, then add grated ginger, ground beef, minced shiitake mushrooms, and diced tofu. While the soup is simmering, add Chinese rice wine, white pepper powder, and salt to it.
  • Slowly pour the cornstarch slurry into the soup. Then, beat the egg whites into the soup, stirring gently to create ribbons of cooked egg. Add the finely chopped cilantro and sesame oil, stirring to blend evenly.
