  • Heat 2 tablespoons of oil in a frying pan over medium-high heat. When the oil is hot, add the eggs. Scramble the eggs and remove from the pan. Set aside.
  • Heat 1 tablespoon of oil in the pan over medium-low heat.
  • Add the scallion and stir-fry for 20 seconds, or until fragrant.
  • Add the tomatoes to the pan and stir-fry for another 2-3 minutes, then add ketchup, sugar and salt.
  • Add the cooked eggs into the pan, and keep stirring until the sauce thickens slightly and coats the eggs and tomatoes.
