  • Preheat your oven to 425°F (220°C).
  • Wash and peel the sweet potatoes. Slice them into thin, uniform strips, about 1/4 inch thick, similar to French fries.
  • In a large bowl, combine the sweet potato strips, cornstarch, salt, garlic powder, paprika and pepper. Toss until the sweet potato strips are uniformly coated with the seasonings. Drizzle them evenly with vegetable oil and toss to ensure an even coating.
  • Line two baking sheets with parchment paper. Spread out the seasoned sweet potato strips in a single layer on the two baking sheets, ensuring they have enough space and aren't overcrowded.
  • Place the baking sheet in the preheated oven and bake for about 25 minutes. After the first 15 minutes, flip the fries with a spatula to ensure even cooking. Bake for another 10 minutes until they are golden brown and crispy.
  • Remove the sweet potato fries from the oven and let them cool for a minute or two before serving. Serve with your favorite dipping sauce, such as ketchup, aioli, or ranch dressing.
