  • Rinse the clams thoroughly under cold water and scrub them to remove any sand or debris. Soak the clams in a large bowl of cold water for about 20-30 minutes, changing the water a couple of times. This helps them release any remaining sand.
  • Combine the sauce ingredients in a small bowl and mix well.
  • Heat a wok over medium heat. Add the vegetable oil and swirl to coat the pan. Add the ginger, garlic and chili pepper. Stir-fry for about 30 seconds until fragrant. Add the sliced scallions and stir-fry for another 30 seconds.
  • Turn the heat to high and add the cleaned clams to the wok. Stir-fry for a minute. Pour in the dry white wine over the clams and cover the wok with a lid. Let the clams steam for several minutes or until they open. Then, pour in the sauce mixture and stir well to combine. Discard any clams that do not open.
