The heart of the Stir-Fried Peppers with Scallops is the scallops, often hailed as the treasures of the sea. These delicate, round seafood morsels are revered for their natural sweetness and saltiness. The scallops are perfectly seared in a hot pan, creating a golden crust that adds delightful crispiness to every bite. Their tender texture pairs perfectly with the bell peppers’ crunchiness, making them a dynamic and satisfying combination.

  • Combine the sauce ingredients in a small bowl and mix well.
  • Pat the scallops dry with a paper towel. Heat a wok over high heat until it's smoking hot. Add 1 tablespoon of vegetable oil and swirl it around to coat the cooking surface. Carefully add the scallops to the hot wok. Allow them to sear without moving for about 1-2 minutes on each side until they develop a golden crust. Transfer the cooked scallops to a plate and set them aside.
  • In the same wok, add another tablespoon of oil. Add the garlic and ginger. Stir-fry for about 20 seconds until they become fragrant. Toss in the sliced bell peppers. Stir-fry for 2-3 minutes until the peppers start to soften but are still crisp.
  • Return the cooked scallops to the wok with the peppers. Add the sauce and stir-fry everything together for an additional 1 minute until well combined. Garnish with chopped green onions. Transfer the stir-fried peppers with scallops to a serving plate.
