  • In a small bowl, mix together Shaoxing rice wine, sugar, salt and white pepper.
  • In another small bowl, mix together cornstarch and water to make a cornstarch slurry.
  • In a pan, heat the vegetable oil over medium-high heat. Add the shrimp to the pan and stir-fry until they turn pink, about 2 minutes. Transfer the shrimp to a plate and set it aside.
  • Add a little bit more oil to the pan. Add the garlic and ginger to the pan, and stir-fry for 30 seconds until fragrant. Add the ground pork and stir-fry until browned.
  • Pour chicken broth into the pan and add the peas. Then, add the sauce mixture and stir-fry for an additional 2 minutes until the vegetables are just tender. Return the shrimp to the pan and pour in the cornstarch slurry. Cook over medium heat, while stirring constantly, until the sauce thickens.
  • Beat in the egg while stirring. Taste and adjust the seasoning with salt and pepper as needed. Sprinkle with chopped green onions.
