Instructions
-
Bring a large pot of water to a boil. Cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside.
-
In a skillet, heat 2 tablespoons (28g) of olive oil and 2 tablespoons (28g) of butter over medium-high heat. Add shallots, garlic and red pepper flakes. Sauté for about 3-4 minutes and add the shrimp in the skillet in a single layer and cook for about 1-2 minutes on each side or until they turn pink. Remove the cooked shrimp and shallots from the pan and set them aside.
-
In the same skillet, add the remaining 1 tablespoon (14g) of unsalted butter and 1 tablespoon (12g) of olive oil. Pour in the white wine and lemon juice, bring to a boil. Add the cooked pasta and shrimp to the skillet. Toss everything together to combine. Taste and adjust the seasoning with salt and black pepper as necessary. Garnish with fresh parsley.
-
Divide the Shrimp Scampi with Pasta among plates, garnish with grated Parmesan cheese, and serve hot.
