  • Heat 1 tablespoon (13g) of vegetable oil in a large skillet over medium- high heat. Pour the beaten eggs into the skillet. Scramble the eggs until they are fully cooked. Remove the eggs from the skillet and set aside.
  • Add 3 cups of water to a medium pot and bring it to a boil over high heat. Then, reduce the heat to medium-high and add the shrimp to the pot. After about 2 minutes, drain the shrimp and transfer them to a plate, setting them aside.
  • Add the scallops to the pot. After about 3 minutes, drain the scallops and transfer them to a plate, setting them aside.
  • In the skillet, add another tablespoon (13g) of vegetable oil and sauté the minced garlic until fragrant. Add the diced carrots and frozen peas to the skillet in sequence, stir-fry until softened, then transfer them to a bowl .
  • Heat 1 tablespoon (13g) of vegetable oil in a skillet over medium-high heat. Add the rice to the skillet and stir-fry for 5-6 minutes, using a spatula to break up any clumps and ensure the rice grains are evenly coated and separated. Add the soy sauce, salt and ground white pepper to the skillet and stir everything together until the rice is evenly coated with the sauces.
  • Add the scrambled egg, cooked seafood and vegetables back into the skillet and stir everything together. Add the green onion and sauté for 10 seconds. Transfer the seafood fried rice to a platter.
