  • Cook the egg noodles according to the package instructions. Drain and set aside.
  • Combine all the sauce ingredients in a small bowl. Mix until the sugar is dissolved. Set aside.
  • In the pot of boiling noodles, blanch the squid and immediately remove it as soon as it curls up. Drain off any excess water.
  • In the same pot, add shrimp and scallops and cook for 1 or 2 minutes. Transfer them to a plate. Drain off any excess water.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and ginger to the skillet and stir-fry for 30 seconds until fragrant.
  • Add the onion and carrot to the skillet and stir-fry for another 2 minutes until slightly softened.
  • Add the noodles, bean sprouts, squid, shrimp and scallops to the skillet. Stir-fry for 1 minute until the seafood is cooked through.
  • Pour the sauce mixture and add green onions into the skillet and stir everything together until well combined. Cook for an additional one minute until the sauce thickens.
  • Serve the Seafood Chow Mein hot and enjoy!
