  • Combine cornstarch and water, stirring thoroughly to create a slurry.
  • Pour the chicken or vegetable broth and water into a pot and bring it to a boil.
  • Place the shrimp and bay scallops in the pot individually, cooking each for 2-3 minutes, then ladle them into bowls.
  • Add mushrooms, peas, and tofu cubes to the pot, simmer for 3-4 minutes. Pour the cooked shrimp and scallops into the pot. Add the cornstarch slurry and cook for another 2 minutes until the soup thickens. Season with salt and white pepper. Slowly pour the egg whites into the pot while stirring, until the egg whites form silky threads. Ladle the soup into small bowls, sprinkle with chopped green onions, and enjoy the hot seafood and tofu soup!
