  • Wash the Chinese yellow chives thoroughly and cut them into approximately 2-inch (5 cm) lengths. Drain any excess water and set aside.
  • Heat a wok over medium-high heat and add 2 tablespoons (26g) of vegetable oil. Pour in the beaten eggs, stir-frying until fully cooked. Remove the eggs from the wok and set aside.
  • Heat 1 tablespoon (13g) of vegetable oil in the wok and add the Chinese yellow chives. Gently toss the chives to ensure even heating. Return the scrambled eggs back into the wok and sprinkle with salt.
