Scallion Pancakes

Scallion pancake is a highly popular snack. When freshly made, scallion pancake is crispy on the outside and tender on the inside, with a mouthful of fragrant scallion oil when bitten while still hot.

  • In a mixing bowl, combine the flour and boiling water. Mix with chopsticks until it forms a crumbly texture. Add cold water and knead the dough with your hands until the surface becomes smooth. Wrap the dough in plastic wrap and allow it to rest for 30 minutes.
  • Once the dough has finished resting, divide it into six balls. Cover dough with a wet kitchen towel.
  • Roll the dough into thin discs. Brush the surface of each disc with oil and sprinkle salt, chicken bouillon powder, and chopped green onions on top. Roll the thin discs into tight cylinders, then roll from one end to the other.
  • Flatten each spiral-shaped dough with your hands, then roll them out into thin pancakes.
  • Heat a skillet over medium heat and add a small amount of vegetable oil. Fry each scallion pancake on each side for about 2-3 minutes until they are golden brown and crispy.
  • Once all the scallion pancakes are fried, cut them into triangles.
