  • Clean the squid and cut into rings or bite-sized pieces.
  • In a mixing bowl, whisk together the salt, Shaoxing wine, egg and ground white pepper until well combined.
  • Dip the squid rings in beaten egg, then coat them with cornstarch, shaking off any excess cornstarch.
  • Heat vegetable oil in a pot to 375°F (190°C). Gently place the coated squid in the hot oil, , a few pieces at a time, and fry for 2-3 minutes until they turn golden brown and crispy.
  • Using a slotted spoon, remove the fried squid from the oil and place on a serving plate.
  • Sprinkle with additional salt and pepper to taste. Garnish with green onions and red chili.
