In the tropical regions of Asia, there is a delicious dessert that always brings a refreshing sensation to people, and that is Sago with Coconut Milk. This dessert not only offers a cooling texture but also carries a rich coconut aroma. Serving the chilled Sago with Coconut Milk in a bowl, accompanied by fresh fruits like mango, blueberries, or strawberries, adds layers of texture and a natural sweetness, as if a single bite allows you to taste the refreshing essence of nature.
In a pot, bring 8 cups of water to a boil. Add the sago pearls to the boiling water and cook over medium-high heat for approximately 8 minutes, stirring occasionally to prevent sticking.
At this point, you will see that the sago pearls have turned semi-transparent, with each pearl having a white spot in the center and being transparent on the outside. Turn off the heat, cover the pot, and let it sit for about 10 minutes, until almost all the sago pearls become transparent. Pour the sago pearls into a sieve and rinse them continuously with cold running water.
In a separate saucepan, heat the coconut milk, 1 cup (236g) of water and milk over medium heat. Add the sugar and stir until the sugar is fully dissolved. Turn off the heat and add the cooked sago pearls into the coconut milk mixture and stir gently to combine.
Let Sago with coconut milk cool down and then refrigerate it until cold. Serve them in bowls, and you can add fresh fruits like mango, blueberries, or strawberries for added flavor and texture.
