Pad Thai is a delicious Thai delicacy that showcases the flavors of Thailand. It is made with wide, soft rice noodles as the base, paired with fresh seafood, meat, or vegetables, and seasoned with a spicy and savory sauce. The result is a dish that is not only visually appealing but also bursting with delightful flavors and aromas.
Cook the rice noodles according to the package instructions. Drain and set aside.
In a small bowl, mix together the tamarind paste, fish sauce, soy sauce, brown sugar, and red chili flakes to make the sauce.
Heat 2 tablespoons (26g) of oil in a skillet over medium-high heat. When the oil is hot, add the eggs. Scramble the eggs and remove from the pan.
In the skillet, heat another 2 tablespoons (26g) of vegetable oil over medium-high heat. Add minced garlic and onion, sauté for about 4 minutes until fragrant. Add the chicken to the skillet, stir-fry for 4 minutes, then add the shrimp and stir-fry until cooked through.
Add the cooked rice noodles to the skillet, followed by the prepared sauce. Add the bean sprouts, pickled radish, scrambled eggs, Chinese garlic chives and green onions to the skillet. Stir-fry for another 1-2 minutes until the vegetables are slightly softened.
Remove the skillet from the heat and sprinkle crushed peanuts over the top. Serve the Pad Thai hot, garnished with lime wedges on the side.
