  • In a small bowl, mix the gelatin with cold water. Let it sit for 5 minutes to bloom.
  • In a small bowl, whisk together 1/2 cup (120g) of whole milk and matcha powder until smooth. Ensure there are no lumps.
  • In a saucepan, combine the remaining 1 1/2 (360g) cups of whole milk, sugar and condensed milk. Heat the mixture over medium heat, stirring constantly until it's warm but not boiling.
  • Slowly pour the matcha mixture into the milk, ensuring even mixing. Place the bowl containing gelatin in hot water, stir until the gelatin is completely dissolved. Gradually add the gelatin to the mixture of matcha and milk, stirring constantly. To achieve a smoother texture, you can strain the matcha pudding through a sieve into another bowl.
  • Allow the matcha pudding to cool to room temperature. Pour it into small glass bowls. Place them in the refrigerator for at least 4 hours or overnight.
  • Once set, sprinkle some matcha powder on top and add a dollop of fresh cream for an elegant touch of flavor.
