  • In a food processor, combine the flour, sugar, and salt. Add the chilled butter cubes and pulse until the mixture resembles coarse crumbs.
  • In a small bowl, whisk together the egg yolk and heavy cream. Gradually add this mixture to the flour-butter mixture, pulsing until the dough comes together. Turn the dough out onto a floured surface and knead it into a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface and line a tart pan with the crust. Trim the excess and prick the bottom with a fork. Place it back in the refrigerator for another 15 minutes.
  • Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment paper and bake for an additional 10-12 minutes or until the crust is golden brown. Allow it to cool.
  • In a medium saucepan, whisk together the sugar, lemon juice, lemon zest, heavy cream, eggs and egg yolks. Place the saucepan over medium heat, stirring constantly until the mixture thickens and a thermometer reaches 170°F/76°C. Once thickened, remove it from the heat. Stir in the melted butter until well combined. Let the lemon filling cool slightly.
  • Pour the lemon filling into the cooled tart crust, spreading it evenly. Refrigerate the lemon tart for at least 2 hours to allow it to set. Before serving, garnish with additional lemon zest or a dusting of powdered sugar.
