  • Blanch the pork ribs in boiling water for a few minutes to remove impurities. Place the ribs on a large plate and set them aside.
  • In a large pot, add the pork ribs, ginger slices, green onions and 10 cups (2365g) of water. Bring the water to a boil and then reduce the heat to low. Let it simmer for about 1 hour, skimming off any foam that forms on the surface.
  • Add lotus root and red dates to the pot. Continue to simmer for 1 hour until the lotus root becomes soft. Put dried goji berries into the pot and simmer for 10 more minutes. Season the soup with salt to taste.
  • Remove the pot from the heat, discard the ginger and green onion. Ladle the soup into bowls, sprinkle with chopped green onions and enjoy.
