Lobster Yee Mein is a delicately delicious Chinese cuisine that combines tender lobster with fragrant Yee Mein noodles, creating a tantalizing dish.   • Clean the lobster and chop it into pieces. Gently crack the lobster claws beforehand. Pat the lobster dry with paper towels.
  • Bring a large pot of water to a boil. Cook the yi mein noodles according to the package instructions. Drain and set aside.
  • Prepare the sauce by combining all the sauce ingredients in a small bowl. Stir well until the sugar dissolves.
  • Heat vegetable oil in a wok over medium-high heat until it reaches 350°F (180°C). Gently coat the lobster pieces with a light dusting of cornstarch. Carefully add the lobster pieces to the hot oil. Be sure to fry them in batches to avoid overcrowding the wok. Fry each batch for about 1 minute or until the lobster turns red. Transfer the lobster to a big plate.
  • Remove any excess oil and retain one tablespoon of oil in the wok. Heat vegetable oil in the wok over medium heat, then add the garlic, ginger, and 2 oz green onions. Sauté for approximately 30 seconds until fragrant.
  • Turn the heat to medium-high. Return the lobster pieces into the wok and pour in 1 tablespoon of cooking wine. Stir-fry for 1 minute, making sure everything is evenly coated. Add the sauce and pour boiling water over the lobster without fully immersing it, reaching approximately halfway up the lobster's depth. Stir to coat the sauce evenly. Cover the wok with a lid and cook for a couple of minutes or until the lobster pieces are thoroughly cooked.
  • In a small bowl, combine 2 teaspoons of cornstarch and 1 tablespoon of water to create a slurry.
  • Add the slurry and 2 oz green onions to the wok. Cook for 30 seconds. Remove the lobster from the wok and pour it over the yi mein noodles. Serve hot and enjoy!
