Lobster Croissant Sandwiches build upon the foundation of traditional croissant sandwiches, transforming them into a luxurious delight. First, cook the lobster tails. You can boil, steam, or bake them based on your preference. Adjust the cooking time according to the size of the lobster tails. Once they've cooled, remove the meat from the shells and cut it into bite-sized pieces.
In a mixing bowl, combine the mayonnaise, Greek yogurt, celery, chives, lemon juice, salt, and pepper. Mix these ingredients until they form a creamy and well-blended dressing.
