  • Separate the lettuce leaves and wash them thoroughly. Pat them dry and set aside.
  • Heat the vegetable oil in a skillet over medium heat. Add the minced garlic, ginger and shiitake mushrooms, sauté until fragrant. Add the chopped onion and sauté until lightly translucent. Add the ground chicken to the skillet and cook until browned, breaking it up into small pieces with a spatula.
  • Stir in the grated carrot and chopped water chestnuts. Stir-fry for a few more minutes until the carrots are slightly softened.
  • In a small bowl, mix rice vinegar, soy sauce, oyster sauce, and sugar together. Pour the sauce into the skillet with chicken and vegetables, stirring well. Season with salt and pepper to taste, and add chopped green onions to the pot. Remove the skillet from the heat source.
  • Scoop a spoonful of chicken filling onto a lettuce leaf, garnish with crushed peanuts. Roll up the lettuce leaf, enclosing the filling, and enjoy the delicious lettuce wrap.
