  • In a small bowl, whisk together sugar, oyster sauce, soy sauce, water and cornstarch. Stir to combine.
  • Separate the iceberg lettuce leaves, thoroughly wash them, drain excess water, and set them aside.
  • In a pot, add water and bring to a boil over high heat. Add a pinch of salt and ¼ teaspoon (1g) of oil, then blanch the lettuce for 10 seconds. Transfer the lettuce onto a plate, drain off any excess water.
  • Heat a wok over medium-high heat, then add cooking oil.
  • Add the minced garlic to the hot oil and stir-fry for about 30 seconds, or until fragrant. Then, pour in the sauce and bring the mixture to a simmer.
  • Pour the sauce over the cooked lettuce, and serve immediately.
