  • In a large bowl, crack the eggs, add salt and black pepper. Add the shredded carrots and green onions into the egg mixture. Stir well to ensure even distribution of vegetables.
  • Place a flat pan on medium heat, and once hot, spread a thin layer of vegetable oil on the surface. Reduce the heat to medium low. Pour 1/3 of the egg mixture into the pan, spreading it evenly to form a thin layer.
  • Using a spatula, start folding from one end, and the width of the rolled omelette should be about 1.5 inches (3.81 cm). Continue folding, leaving 0.5-0.6 inches (1.2-1.5 cm) of the omelette unrolled. Now, use the spatula to pull the folded portion to one edge of the pan to make space for the remaining egg mixture. Pour another 1/3 of the egg mixture onto the empty side of the pan so the wet egg mixture connects with the cooked portion. Fold the omelette again. Repeat this process until all the egg mixture is used. Each time you fold, make sure the previous layer of egg is enclosed in the new layer.
  • Maintain medium-low heat and cook the Gyeran-mari until the surface turns golden and the inside is thoroughly cooked. Take the rolled omelette out of the pan, let it cool slightly, and then slice it into even thin pieces.

Notes

Tips: If desired, you can add other vegetables, ham, or cooked meat for added texture and flavor. Adjust the amount of salt and sugar according to personal taste.
