  • Soak the wood ear mushrooms in warm water for 20 minutes. Drain and squeeze out the excess water. Thinly slice the wood ear mushrooms.
  • Combine the sauce ingredients in a small bowl and mix well. Set aside.
  • Add chicken stock to the pot, bring it to a boil, and add wood ear mushrooms and carrots; boil for 2 minutes. Afterward, add bamboo shoots, shiitake mushrooms, and tofu, allowing them to simmer for an additional 2 minutes. Reduce the heat to medium-low and add the sauce mixture to the soup and stir well.
  • In a separate bowl, mix cornstarch with 2 tablespoons (30g) of water until smooth.
  • Slowly pour the cornstarch mixture into the pot while continuously stirring. Cook for 1 minute until the soup thickens. Slowly pour in the beaten egg, stirring the soup in a circular motion.
