Soak the wood ear mushrooms in warm water for 20 minutes. Drain and squeeze out the excess water. Thinly slice the wood ear mushrooms.

Combine the sauce ingredients in a small bowl and mix well. Set aside.

Add chicken stock to the pot, bring it to a boil, and add wood ear mushrooms and carrots; boil for 2 minutes. Afterward, add bamboo shoots, shiitake mushrooms, and tofu, allowing them to simmer for an additional 2 minutes. Reduce the heat to medium-low and add the sauce mixture to the soup and stir well.
