Vanilla fudge is one of the classics in the world of delicious treats, renowned for its smooth and silky texture.   • Line an 8x8 inch (20x20cm) square baking pan with parchment paper, leaving some overhang on the sides for easy removal later.
  • In a heavy-bottomed saucepan, combine the sugar, heavy cream, white chocolate and salt. Place the saucepan over low heat and stir continuously until the sugar dissolves and the mixture comes to a low boil. Insert a candy thermometer into the mixture. Cook without stirring until the temperature reaches 238°F (114°C) or reaches the soft-ball stage. This usually takes about 10-15 minutes.
  • Remove the saucepan from the heat and let it sit for a few minutes to cool slightly. Add the vanilla extract to the mixture and stir it in until well combined.
  • Pour the hot fudge mixture into the prepared baking pan. Let it cool at room temperature for about 2-3 hours, or until it's completely set. Once the fudge has set, use the parchment paper overhangs to lift it out of the pan. Place it on a cutting board.
  • Using a sharp knife, cut the vanilla fudge into small squares or rectangles. You can make them as large or small as you like. Store any leftovers in an airtight container at room temperature.
