  • In a pot, add enough water, ginger, green onions, lemongrass, salt and rice wine. Bring the water to a boil. Place the chicken into the pot and then reduce the heat to low. Cover and simmer for about 30 minutes until the chicken is cooked through.
  • Take out the chicken from the pot. Submerge it into a large bowl filled with ice-cold water. Once cooled, pat the chicken dry with paper towels and rub the chicken with a little sesame oil to give it a nice gloss.
  • In a separate pot, heat vegetable oil over medium heat. Add minced garlic, sauté until fragrant. Add jasmine rice to the pot and stir-fry for a couple of minutes. Add 2 cups of chicken broth and salt to the pot. Bring it to a boil, then lower the heat and simmer, covered, for approximately 30 minutes until the rice is fully cooked.
  • While the rice is cooking, prepare the sauce by combining all the sauce ingredients in a small bowl. Stir well until the sugar dissolves.
  • Slice the chicken into serving pieces. Serve the rice on a plate, placing the chicken slices on top of the rice. Garnish with cucumber slices and cilantro. Serve the sauce in a separate bowl as a dipping sauce for the chicken and rice.
