  • Use a sharp knife to create shallow diagonal cuts on both sides of the mackerel. This will ensure the fish cooks evenly and absorbs the flavors. Brush the mackerel lightly with cooking oil. This will help achieve a crispy skin. Sprinkle salt generously over both sides of the mackerel. Be sure to season inside the cavity as well.
  • Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking. Place the seasoned mackerel on the grill grates, diagonal cuts facing down. Grill for about 3 minutes on each side or until the fish is cooked through. The skin should be crispy, and the flesh should easily flake with a fork.
