  • Preheat your oven to 350°F (175°C) and butter a 9x13-inch (23 cm x 33 cm) baking dish.
  • In a saucepan, melt the butter over low heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the flour to create a roux. Gradually whisk in the milk, ensuring there are no lumps. Simmer the mixture for about 5 minutes until it thickens, stirring frequently. Stir in 1 cup (118g) of shredded cheddar cheese. Continue stirring until the cheese is melted and the sauce is smooth. Season the sauce with salt and black pepper. Remove it from heat.
  • Place a layer of thinly sliced potatoes at the bottom of the prepared baking dish. Pour a portion of the creamy sauce over the potatoes, ensuring they are well covered. Repeat the process, layering potatoes and sauce until you use them all, finishing with a layer of sauce on top. Sprinkle the remaining 1/2 cup (59g) of shredded cheddar cheese over the top.
  • Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 30-35 minutes or until the potatoes are tender and the top is golden brown. Once out of the oven, let the scalloped potatoes sit for a few minutes to set. Garnish with chopped parsley before serving.
